Ingredients
  • 2 quarts chicken stock
  • 1 bunch green onions (divided)
  • 1 cloves garlic (thinly sliced)
  • 1 pieces fresh ginger
  • 2 tsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sugar
  • 1 tsp kosher salt
  • 1 pound ground pork
  • 2 tsp toasted sesame oil
  • 2 tsp cornstarch
  • 3 heads baby bok choy
  • 20 wonton wrappers
  • Sriracha hot sauce

    • Step 1
    • In a large pot or Dutch oven, place the chicken stock and heat it to medium-high. Tear the white sections of the green onions into 1-inch pieces and add them to the soup. Add a clove of garlic. Add 1 inch of thinly sliced ginger (or 1 teaspoon of ground ginger) to the stock. Include 1 tsp soy sauce.
    • Step 2
    • Add ingredients to broth after forming into 1-inch balls. As an alternative, scoop out heaping scoops of meat from the broth using a little spoon. Simmer the mixture for five minutes. Toss in the bok choy, wonton wrappers, and more soy sauce to taste. Cook, stirring periodically, for 8 minutes. Serve with green onions and hot sauce or chili crisp.
