Instructions:
Cook the Pasta:
Heat a big saucepan of salted water till it boils. When the pasta is al dente, add it and cook it as directed on the package. After draining the pasta and setting aside, save about 1/2 cup of the pasta water.
Prepare the Creamy Tuscan Sauce:
Heat the olive oil in a big skillet over medium heat. 
Add the minced garlic and chopped onion, sautéing until the onion is soft and translucent, about 3-4 minutes.
Cook for an additional two minutes, stirring, to enable the flavors to mingle, after adding the sun-dried tomatoes.
Add the heavy cream and boil for a short while.
Reduce the heat to low and stir in the grated Parmesan cheese, dried oregano, dried basil, and crushed red pepper flakes (if using). Simmer the sauce for five minutes, stirring now and again, until it slightly thickens.
Add the chopped spinach to the sauce and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
Combine the Pasta and Sauce:
Add the cooked pasta to the skillet with the creamy sauce. Make sure the sauce coats the pasta evenly after tossing everything together. A tablespoon at a time, add a little of the pasta water that was set aside if the sauce is too thick until you get the right consistency.

Instructions
1. Preheat Oven: Preheat your oven to 375°F (190°C).
2. Prepare Enchilada Sauce: In a medium saucepan, heat the vegetable oil over medium heat. Whisk in the flour and chili powder, and cook for about 1 minute. Add the garlic powder, onion powder, cumin, and oregano. Gradually whisk in the chicken broth. Simmer the sauce for 10 minutes, stirring occasionally, until it thickens. Add salt to taste.
3. Prepare the Filling: In a large mixing bowl, combine the shredded chicken, 1/2 cup cheddar cheese, 1/2 cup Monterey Jack cheese, and diced onions. Mix well.
4. Assemble Enchiladas: Warm the tortillas in the microwave for about 20 seconds to make them pliable. Spread 1/4 cup of the chicken mixture down the center of each tortilla. Roll up the tortillas and place them seam-side down in a greased baking dish.
5. Add Sauce and Cheese: Pour the enchilada sauce evenly over the top of the rolled tortillas.

Chinese Authentic Egg Rolls made from thin wheat flour wrappers packed with a savory blend of seasoned ground pork, shredded cabbage, carrots, and aromatic spices, Chinese authentic egg rolls are a tasty and traditional appetizer. Usually deep-fried, the crunchy, golden-brown outside of these egg rolls perfectly matches the soft, savory contents within. 
Ingredients
4 teaspoons vegetable oil, divided
3 large eggs, beaten
1 medium head cabbage, finely shredded
½ carrot, julienned
1 pound Chinese barbecue or roasted pork, cut into matchsticks
1 (8 ounce) can shredded bamboo shoots
1 cup dried, shredded wood ear mushroom, rehydrated
2 green onions, thinly sliced
2 ½ teaspoons soy sauce
1 teaspoon salt
1 teaspoon sugar
½ teaspoon monosodium glutamate (MSG)
1 (14 ounce) package egg roll wrappers
1 egg white, beaten
4 cups oil for frying, or as needed
Directions
Step 1:Heat one teaspoon of vegetable oil over medium heat. Add the whisked eggs and continue cooking without stirring until they solidify. To firm the other side, flip the eggs over and heat for a further twenty seconds. After letting the egg pancake cool, cut it into thin pieces.

Step 2:Heat the remaining vegetable oil over high heat. Add the carrot and cabbage and stir; let it wilt for two minutes. Incorporate the pork, bamboo shoots, mushroom, green onions, soy sauce, salt, sugar, and MSG. Cook for an additional six minutes or until the vegetables become tender. After adding the sliced egg and spreading the mixture onto a pan, chill for approximately one hour or until it becomes cold.
Step 3: Lay a wrapper with one corner pointing in your direction on your work table to begin assembling the egg rolls. Spoon approximately 3 tablespoons of the cooked filling onto the lower third of the wrapper. Ingredients
2 quarts chicken stock or broth
1 bunch green onions, divided
1 garlic clove, thinly sliced
1 (3-inch) piece fresh ginger, peeled, or 2 teaspoons ground ginger
2 tablespoons soy sauce, plus more to taste
1 1/2 teaspoons rice vinegar
1 tablespoon brown sugar
1 teaspoon kosher salt, divided
1 pound ground mutton
2 teaspoons toasted sesame oil
2 teaspoons cornstarch
3 heads baby bok choy, roughly chopped (about 3 cups)
20 wonton wrappers, cut into quarters
Sriracha hot sauce or chili crunch (optional)
Directions
Step 1
In a large pot or Dutch oven, place the chicken stock and heat it to medium-high. Tear the white sections of the green onions into 1-inch pieces and add them to the soup. Add a clove of garlic. Add 1 inch of thinly sliced ginger (or 1 teaspoon of ground ginger) to the stock. Include 1 tsp soy sauce.
Step 2
Add ingredients to broth after forming into 1-inch balls. As an alternative, scoop out heaping scoops of meat from the broth using a little spoon. Simmer the mixture for five minutes. Toss in the bok choy, wonton wrappers, and more soy sauce to taste. Cook, stirring periodically, for 8 minutes. Serve with green onions and hot sauce or chili crisp.

Creamy Pasta With Red Pepper and Blistered Tomatoes 
This vegan version of Creamy Red Pepper Pasta is quite tasty! Rigatoni was perfectly chewy, juicy tomatoes that had blisters, a creamy roasted red pepper sauce that lacked cream, and a finishing touch of fresh basil and chives. 
We've made the creamy red pepper sauce a few times already, such as this time with cashews and roasted cauliflower and this time with zucchini noodles, almond milk, butter, fettuccine, and shrimp. Additionally, we've already made spaghetti with a creamy cashew sauce. However, the reason this version is unique is that it captures us exactly as we are right now.
I want to stress the value of high-quality ingredients whenever I share a recipe with a minimal ingredient list. The key components that will elevate all of your most straightforward and exquisite dishes are just a few items. 

INGREDIENTS
1 lb. Rigatoni 
2–3 cups cherry tomatoes
a quick swish of olive oil
salt and pepper
Sauce
1 1/4 cup cashews
1/4 cup olive oil
1 1/2 cups water
1 large roasted red pepper 
1/2 cup red peppers
1 clove garlic
2 tablespoons nutritional yeast 
1 1/2 teaspoons salt
chives and basil for topping

INSTRUCTIONS
1. Pasta: Prepare pasta as directed on the package.
2.Tomates: Set the broiler to high. Cherry tomatoes should be tossed with olive oil, salt, and pepper on a baking sheet. Broil until very roasted, 10 to 15 minutes.
3. Sauce: In the meantime, purée the ingredients for the sauce in a blender until it's smooth and creamy. Pour over the hot, cooked pasta (off the heat), stirring to combine; the sauce should stick to the pasta well.
4.Serve: Sprinkle extra salt, pepper, and herbs on top of the tomatoes.
